We had great harvest pancakes and gluten free pancakes, strawberries, whipped cream,  Nana's buttermilk syrup & bacon.  It was delicious and so fun!

Family and Food :)

Mama and Papa Miller came to visit Virginia! We wish we could have taken more pictures but this is just one from where I work. They came to visit and eat lunch together! :)

BBQ Grilled Chicken Pizza!! 

BBQ Chicken (sauce from Trader Joes)

Pre- Oven Pizza (bbq sauce, chicken, black beans, onions, cilantro, & cheese)

Mouth Watering Goodness!

I was so excited to surprise Bri when he got home with the smell of our favorite kind of pizza! I love my days off work!

Okay, I hate to say it but this was even better than the pizza!! Chicken Tortilla Soup!! We ate/slurped the whole pot in one night... it was that good! It is a Sorensen Family Recipe I got from my very own cookbook (Thanks Tanya & Maren:) 

The recipe is easy:
1 rotisserie chicken ( or 2 chicken breasts)
1 onion
2 Tbsp minced garlic
6 cups chicken broth
1 can diced tomatoes (juice and all)
1 can of black beans (drained)
1 cup frozen corn
Salt and Pepper to taste
1-2 chipotle peppers in adobo sauce ( its in a small red can)
2 limes
1 cup cilantro
avocado, diced
monterey jack cheese shredded
Tortilla chips
Remove meat from chicken and cut into bit size pieces (I only use half and then use the other half for other recipes) or use 2 cups boiled chicken. In a large pot, saute onions and garlic. Pour in chicken broth, tomatoes, beans, corn, and chicken. Open and remove seeds from peppers and chop finely (don't remove the sauce this is the best part). Add a handful of cilantro and lime juice. Add salt and pepper to taste. Serve with tortilla chips, avocado, and cheese, and lime slices. Great with quesadillas!

I was so proud of myself this morning, I woke up made Brian lunch, made scrambled eggs, and toast! (I put cream cheese on my toast, Brian puts peanut butter on his! I also tried this dark chocolate soy milk that made the whole breakfast complete! It was a delight :) O and clementine cuties for our morning fruit (Vit. C) dose! :) Have a good week everyone!

Visiting Family in CA

I got to visit my sister Mckenna at her school to pass out golden spoon frozen yogurt for her birthday! She was the cutest to watch and was the most popular in her class for bringing vanilla/ chocolate with sprinkles!! :)

She was a little embarrassed in the beginning! 

Afterwards, her teacher raved of how great of a student Mckenna was and how she got 100% on her recent spelling test! I am a very proud sister!!

Opening presents :) Boots from Grandma Sorensen! She knew ahead of time because the label wasn't wrapped on the bottom so of course she researched the label online ahead of time. Smart girl, computer savvy! After she opened it she yelled "I knew it!!" hahaha

I love that she read my happy birthday note word for word with great concentration. She is the sweetest girl full of selflessness and love!

We met up with Casi and Ayla in Irvine and had so much fun riding on this  helium filled jack o' lantern!!

May stomach had major butterflies but we had so much fun! We miss everyone already so much! We love Virginia but... nothing is better then family!! Love you all!
