Family and Food :)

Mama and Papa Miller came to visit Virginia! We wish we could have taken more pictures but this is just one from where I work. They came to visit and eat lunch together! :)

BBQ Grilled Chicken Pizza!! 

BBQ Chicken (sauce from Trader Joes)


Pre- Oven Pizza (bbq sauce, chicken, black beans, onions, cilantro, & cheese)

Mouth Watering Goodness!

I was so excited to surprise Bri when he got home with the smell of our favorite kind of pizza! I love my days off work!

Okay, I hate to say it but this was even better than the pizza!! Chicken Tortilla Soup!! We ate/slurped the whole pot in one night... it was that good! It is a Sorensen Family Recipe I got from my very own cookbook (Thanks Tanya & Maren:) 

The recipe is easy:
1 rotisserie chicken ( or 2 chicken breasts)
1 onion
2 Tbsp minced garlic
6 cups chicken broth
1 can diced tomatoes (juice and all)
1 can of black beans (drained)
1 cup frozen corn
Salt and Pepper to taste
1-2 chipotle peppers in adobo sauce ( its in a small red can)
2 limes
1 cup cilantro
avocado, diced
monterey jack cheese shredded
Tortilla chips
Remove meat from chicken and cut into bit size pieces (I only use half and then use the other half for other recipes) or use 2 cups boiled chicken. In a large pot, saute onions and garlic. Pour in chicken broth, tomatoes, beans, corn, and chicken. Open and remove seeds from peppers and chop finely (don't remove the sauce this is the best part). Add a handful of cilantro and lime juice. Add salt and pepper to taste. Serve with tortilla chips, avocado, and cheese, and lime slices. Great with quesadillas!

I was so proud of myself this morning, I woke up made Brian lunch, made scrambled eggs, and toast! (I put cream cheese on my toast, Brian puts peanut butter on his! I also tried this dark chocolate soy milk that made the whole breakfast complete! It was a delight :) O and clementine cuties for our morning fruit (Vit. C) dose! :) Have a good week everyone!
